I wanted to share my food inspirations keeping close to my traditions but allowing space to explore my creativity. I feel like I lost that for a while, the trap of social media to constantly need produce fo keep up with an algorithm that doesnt favor my type of cooking, is exhausting and this stopped being fun and the therapy it was for me.

Recipe ✨
Ingredients✨
- [ ] . King prawns
- [ ] 2 cloves of garlic chopped
- [ ] 1 Tbsp of Soy sauce
- [ ] Abodo
- [ ] 1 Tbsp of tomato paste
- [ ] Your favorite hauce, i used @baronfoods
- [ ] 1 bouquet garnit
- [ ] 1/2 yellow onion,
- [ ] 1 green scotch bonnet pepper ( pierce throught some small incisions, to release aromas
- [ ] Olive oil
- [ ] 1/2 cup of water ( or more depending on how thick you like the sauce)
- [ ] Adobo
- [ ] Salt and pepper
- [ ] 1/4 lb of cherry tomatoes ( cut in half)
Procedure
Clean and devein the prawns. Season with, chopped garlic cloves, adobo, and soy sauce. Set aside and let marinate for at least 10 mns
In the mean time, bring your pan to a medium heat, with olive oil.
Add in your shrimps, seared for 2-3 minutes on each sides. Remove and set aside,in your pan add in a bit more of olive oil, and tomato paste.
Cook for a 5 minutes, add in onions and cherry tomatoes.. cook until onions are translucents.
Add in water, until desired consitency. Add in the habanero pepper, bouquet garni. Season with adobo, hot sauce, salt , and pepper. Reduce heat, cover and let simmer for a few minutes.
Uncover, add back in the shrimps. Cover and let it all simmer together for about 8 minutes, serve hot anr enjoy✨

✨Ingredients
- Premade pastry dough or Phyllo dough
- Camembert wheel
- your favorite apricot jam / (Here I used my mother’s apricot jam straight from the land🇭🇹
- crushed walnuts
- egg wash
Procedure ✨
- on a lightly floured surface roll out pastry dough
- center in the cheese
- layer on the jam and the walnuts
- wrapping the pastry around the cheese, making sure it’s secured on all side
- Spray your baking pan with anti stick spray.
- Bake at 400 F / 205 C

What’s a easter holiday without soufflé de mais. Mais a la crème/ soufflé de Mais , ( cream corn / corn soufflé) however you want to call it, is one of those dishes that takes you from wherever you are in the world, back to a Sunday evening in Haiti, having dinner with family ✨✨
Each family has a on twist to this dish, this is my version✨✨
✨ Ingredients
1/2 cup of diced green onions
1/2 cup diced yellow onion
250 mg crême fraiche
1 cup grated Edam or Gouda cheese + 1 a cup of Grated Parmesan ( save some for dusting)
418 g of sweet corn
418 g of sweet corn cream style
2 Tbsp of butter
1 Tbsp of olive oil
1/2 Tbsp of Epis
1 tsp Dijon Mustard
1 Tsp of hot sauce
1 Tbsp of Flour
Procedure ✨
In hot pan, add it 1 Tbsp of butter and olive oil
Add in diced green onions, onions and Epis. cook until translucent.
Reduce the heat to medium setting, add it the flour. Stirring a few minutes
Add it the sweet corn “ cream style” , stirring until combined with the vegetables,
Add in the crème fraiche / heavy cream.
Add in adobo, mustard, hot sauce, salt and pepper. Stirring until everything is well combined. Taste and adjust seasonings
Fold in the cheese.✨
Add in the drain sweet corn. And stir another 3 /4 minutes
If using a cast iron, dice 1. Tbsp of butter and dust on the cheese mixture .
If you are not using a cast iron, transfer the corn mixture to a baking pan, dice on the butter and dust on the cheese and
Set under the BROILER , at 420 F for 15 minutes, or until golden.

- a whole garlic/ peeled
- 1/2 pack of parsley / cut the stem or it will be bitter
- thym
- salt
1 Tbsp Adobo
2 Tbsp of olive oil
- 1 pack spring onions / green onions
Procedure
Cut the peppers/ the spring onions thym/ parsley
Add your dry spices / salt / adobo
Olive oil and a little bit of water just to its smooth and it blends easily. Keep it in your fridge or use right away✨ enjoy

Airfrier salad?✨😅. We are back with the best transition salad for this season. Healthy but still warm enough to carry us through the last of those cold days✨
Ingredients:
Rocket salad
Sweet potatoes
Chicken thighs
Cranberries
Walnuts
Pumpkin seeds✨
Clean and season the chicken, cut sweet potatoes into cubes, with a seasonning blend of cinnamon, salt, pepper and olive oil. Put them in the airfrier at 200. C for 35 mns .
Make a quick honey mustard vinaigrette, with olive oil, lemon juice, grain mustard, honey, salt and pepper.
Mount your salad, with a bed of rocket, walnuts, cranberries, pumpkin seeds. Add the roasted sweet potatoes, and chopped chicken. Drizzle on your vinaigrette and top off with some feta✨

Recipe:
Bring your potatoes to a boil, adding salt and 1 tsp of baking soda.
In a hot pan drizzle some olive oil, and 1 Tbsp spoon of butter. Add in some chopped garlic, and thyme. Add in your potatoes, and cook until golden on a medium high heat. Flipping them occasionaly. Season with salt and pepper and top with some chopped parsley.✨✨✨

Spicy Orechiette ala Vodka✨.
Ingredients
2 Tbsp of olive oil
1/4 red onion
1/4 c. tomato paste
1/2 tsp. crushed red pepper flakes
1/2 chili pepper
2 tbsp. vodka
salt
Enough pasta for 2
2. Tbsp heavy cream
1/2 c. freshly grated Parmesan, plus more for serving
Procedure ✨
* In a skillet over medium heat, add in olive oil, . Add onions and cook, stirring frequently, until softened, 4 to 5 minutes.
* Add tomato paste stirring frequently, until paste has coated onions and is beginning to darken, add in chili flakes and chilli pepper.
✨deglaze pan with vodka, and had in heavy cream.stir and bring to a simmer
* Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 2 cups of pasta water before draining.
* Return sauce to medium heat ,Add in pasta, stir until well coated .
* Add in pasta water,
* Add half the Parmesan and some butter stir until melted. Adjust seasoning with salt and pepper.
* serve immidiatly and enjoy✨
